Marking the third year of Summer Palace’s one-Michelin star accolade, this five course celebratory menu is themed around the highlights of Chinese Executive Chef, Liu Ching Hai’s career. Three in Cantonese translates to saang, which sounds similar to 生 or life. Inspirations behind each dish were drawn from iconic moments, such as when he first learned the intricacies of stir-frying, right down to his early dates of fatherhood when he attempted to wean two fledgling gourmets. As Chef Liu marks a decade-long tenure at Summer Palace, we hope you are able to taste the passion and hard work that is imbued in every bite.

Chef’s Tasting Menus

Specialising in classical Cantonese and focused on the use of fresh seasonal quality ingredients, Executive Chinese Chef Liu Ching Hai offers weekly rotational of the menus featuring his signature wok-fried dishes, traditional dim sum delights and a selection of nutritious double-boiled soups. Available for both lunch and dinner.

Summer Palace

Awarded Michelin one-star for three consecutive years, Regent Singapore’s Summer Palace is known for its classic Cantonese dishes and extensive dim sum selection. The restaurant, located on the third floor of the hotel, has throughout its 39-year tenure established exceptional repute. The culinary skills and technical prowess of Executive Chinese Chef Liu Ching Hai and Dim Sum Chef Leong Kwok Sing culminates in the restaurant’s set menus that are available for both lunch and dinner. If you fancy a location for private business or social functions, the restaurant’s two private dining rooms are available for booking.

Bring the stars home when you order from Summer Palace’s extensive menu. Thanks to island-wide delivery and takeaway services, restaurant favourites such as double-boiled soups and tender black pepper beef can now be savoured in the comfort of your own home. Free delivery for orders above $180. Minimum delivery order of $30 applies.

For a hassle-free takeaway experience, simply submit your order and payment online, select your desired pick-up date and time, and show up for your pick-up. Orders should be placed at least 45 minutes ahead of pick-up. Guests arriving for pick-up will be eligible for 15 minutes free parking at Regent Singapore’s main entrance. Takeaway collection point is located in the hotel lobby. No minimum order for takeaways.

With floor-to-ceiling glass windows peeking over lush greenery and delicate oriental decorative details, Jade, provides a spacious and serene venue for lunches and dinner functions. Bold red patterned carpet lends a stunning contrast to the wood panelling of the room, while delicate 19th century Chinese porcelain vases with flower motifs and carved lacquer furnishings embellish it with harmonious grandiose. Ideal for birthday celebrations, solemnisations, social/corporate events and business meetings.

Liu Ching Hai, Executive Chinese Chef

Hailing from Hong Kong, Chef Liu is a veteran with over 20 years of experience in fine Cantonese cuisine. With the “aim to use the freshest and highest grade quality ingredients to create authentic yet innovative dishes”, expect a uniquely memorable dining experience at Summer Palace.

Trained under Master Chinese Chefs Fok Wing Tin and Peter Tsang, Chef Liu’s repertoire of delectable Cantonese cuisine has been savoured by international dignitaries, diplomats, Hollywood and Hong Kong celebrities; leading him to be recognised for the “Best Culinary Skills Award’’ in a competition hosted by the Hong Kong Tourism Association. Chef Liu’s cooking philosophy stems from bringing diners Canton comfort using the freshest quality ingredients, presenting innovative creations with nuances of traditional Cantonese flavours.
